If you ask me a braise of lamb shanks might be the most satisfying dish known to mankind. The great thing about braised lamb shanks is that you get the added satisfaction of sucking the marrow from the bones. I think a nice full bodied, red French wine would work well with this dish. You might notice when I eat I often have an arugula salad just to lighten the palate also to get my daily dose of vitamin C and necessary roughage. Plus, a simple arugula salad with a homemade vinaigrette can be absolutely delicious!
